ARAI KEERAI : DOSA/PEPPER GRAVY/VADA/SOUP

ARAI KEERAI DOSA

INGREDIANTS

Arai keerai.                          1 bunch
Small onions.                       10 to 12
Rice flour.                              50 g
Gram flour.                            1/4 kg
Ginger.                                   2 inch
Garlic.                                     6
Salt.                                        Required quantity
Cummin seeds.                    1 tsp
Green chilli.                                5
Ground nuts.                         100 g
Coriander.                              1 bunch
Ghee.                                     Required amount

PREPARATION

Grind arai keerai, coriander and green chilli and transfer into a bowl.  Add ginger garlic paste, cummin seeds, powdered ground nuts, salt, rice flour, Gram flour and small onions.  Mix all the ingredients and add water in it, till it forms into dosa consistency.  Heat the pan and spread the ghee on it.  Spread the batter on the pan like dosa.  This delicious dish will be the most favorite one for kids which is a healthy snack for them.

ARAI KEERAI VADA

INGREDIENTS

Arai keerai.           1 cup
Oil
Salt
Green chilli.           4
Coriander.             1/4 cup
Chopped onion    1 cup
Ginger.                  1 inch
Urad dhal              3 cup

PREPARATION

Allow the urad dhal to soak in a water for four hours.  Grind dhal, salt, chilli and ginger in the form of fine batter without adding water in it.  Transfer the batter in a bowl where greens, coriander and onions are chopped.  Mix all the ingredients and take a plastic cover.  Wet your hands and take a small amount of batter and flatten it on the plastic cover.  Put it inside a hot oil.  The Orange gold color is the correct consistency for a crispy, tasty and healthy vadai.   

ARAI KEERAI PEPPER GRAVY

INGREDIENTS

Arai keerai 1 bunch
Fried pepper powder 2 tsp
Dried red Chilli.      2
Salt
Oil.                            2 tsp
Mustard seeds.     1 tsp
Urad dhal.               2 tsp
Boiled Moong dhal.   50 g
Asoefitida.                  1/4 tsp

PREPARATION

Wash and chop the spleen Amaranth with asoefitida and boil it.  In a pan, pour oil, Mustard seeds, urad dhal, dried red Chilli and fry it.  Pour boiled moong dal in bowl where spleen Amaranth is stored.  Add salt and pepper with the mixture stored in the bowl and pour it in the pan.  Transfer it into a vessel after allowing the gravy to boil for few minutes.

ARAI KEERAI GRAVY

Arai keerai.                        1 bunch
Salt.                                     Required quantity
Turmeric powder.              1/4 tsp
Chilli powder.                      1 tsp
Mustard seeds.                   1/4 tsp
Urad dhal.                             1 tsp
Onions.                                    1
Tomato.                                   2
Toor dhal.                                50g
Asoefitida.                              1/4 tsp
Oil                                             1 tsp  

PREPARATION

Clean the spinach and fill the cooker with toor dhal, turmeric powder and asoefitida.  Pour the required amount of water and close the lid.
Meanwhile cut the onions and tomatoes.
In a pan, Heat one tsp of oil, add Urad dhal, Mustard seeds, and sort the onions with tomatoes, till it turns golden brown.  Add salt and Chilli powder after allowing the boiled spinach to boil with the onion and tomatoes.  It can be eaten as a gravy with rice or Chappathi.

ARAI KEERAI SOUP

INGREDIANTS

Pepper.                            1 tsp
Cummin seeds.              1 tsp
Jeera seeds.                   1 tsp
Oil.                                     2 tsp                          
Salt.                               Required amount      
Onion.                               4
Tomatoes.                       2
Ginger.                              2 inch
Garlic.                               3
Arai keerai.                      1 bowl
Coconut.                         1/2 cup
Cinnamon                       5 g

PREPARATION

Grind coconut, green chilli, cummin seeds,ginger, and tomatoes in the form of dosa batter consistency.  Add finely chopped onions with smashed Garlic, pepper and jeera seeds paste.

Pour both the mixture with cleaned and chopped spinach in a cooker.  Add salt and wait till all the ingredients are nicely boiled.  Now, either you can drink only the water with ghee and cinnamon powder and best taste or Just take mixture and eat it with white rice  is also a great combination.
