Health benefits of Murungai keerai/drumstick leaves RECIPES

Drumstick leaves buttermilk curry

INGREDIENTS

Salt.                                           Required quantity

Boiled rice.                                100g

Channa dhal.                              200g

Toor dhal.                                   200g

Green chilli.                                15

Asoefitida.                                  1/4 tsp

Turmeric powder.                       1/2 tsp

Curd.                                           2 cup

Drumstick leaves.                       2 bunch

Mustard seeds.                            1 tsp

Urad dhal.                                   1 tsp

Grated Coconut                          1 cup

Coriander seeds.                         90g


PREPARATION

Clean and wash the leaves and add few pinch of turmeric powder with required amount of water in it.  Boil the spinach for few minutes.

Fry and grind Asoefitida, Gram dhal, boiled rice, toor dhal, coriander seeds, grated coconut, Chilli in a bowl.

In a fry pan, pour 2 tsp of oil, Mustard seeds, Urad dhal, curry leaves and add the boiled spinach, grinded paste in it.  Pour the buttermilk and allow the gravy to boil for few minutes.  Finally add salt and off the flame.  Now, it's ready to satisfy the tasty buds with delicious taste.

Turmeric                    5 g                       

Pepper powder           1 tsp                                                                                
Cummin seeds            1 tsp

Drumstick leaves        1 bowl

Drumstick leaves concotion or kanji


INGREDIENTS 

Moong dal.                1/2 kg

Raw rice.                   2 kg

Pepper.                      20 g

Cummin seeds.         20 g

Cardamom.               10 g

Drumstick leaves.     2 kg


PREPARATION 


Cardamom, pepper, cumin seeds and cleaned drumstick leaves are taken in a mixie and grind it by adding few amount of water.

Mix the paste with the Raw rice and spread it under the sun for two days.  Heat the pan and fry the rice mixture after adding the fried moong Dal.  Off the flame after you get the fragrance of the above ingredients.

Let the mixture be cooled for grinding in the mixer till it turns into a fine powder. Put the powder in a air tight container As and when you require, in a boiling water add this powder and make it as kanji or concotion.

TO MAKE DRUMSTICK LEAVES DOSA

Use the same powder with little amount of water and mix till you get dosa batter consistency.  Add finelly chopped chilli, coriander, salt and pour the batter on the tava. Serve the hot and spicy dosa to your family.

DRUMSTICK LEAVES DRY CURRY

INGREDIENTS

Salt.                                  Required quantity

Dry red Chilli.                  4

Mustard seeds.                 1 tsp

Urad dhal.                        3 tsp

Gram dhal.                       3 tsp

Drumstick leaves.            1 bowl

Garlic.                              4

PREPARATION

In pan, pour oil and heat it.  Mustard seeds, Urad dhal, Gram dhal, red Chilli in it. Crush the garlic and Add the cleaned and washed drumstick leaves and slightly toss it.  Allow the leaves to boil by closing the lid.  Sprinkle required salt, grinded ground nuts powder for added delicious taste.
