Tropical Amarnath recipes

SIRU KEERAI / TROPICAL AMARANTH DOSA 

INGREDIENTS


Siru keerai.                                    1 bunch
Ginger.                                           2 inch
Onion.                                            3
Tomatoes.                                       2
Mint leaves.                                    1/2 bunch
Salt.                                                 Required quantity
Boiled rice.                                     1 cup
Raw rice.                                        1 cup
Fenugreek seeds.                            1 tsp
Coriander leaves.                            1 cup
Green chilli.                                    4
Salt.                                                 Required quantity
White lentil.                                    1/2 cup


PREPARATION

Take raw rice, boiled rice, fenugreek seeds and Urad dhal or white lentil and grind it in the form of dosa batter. Add the required amount of salt in the batter. Clean, wash and chop the coriander leaves, tropical Amaranth, ginger, onions, tomatoes, green chilli, and mint leaves.  Spread the dosa batter on the tawa and sprinkle the finely chopped mixture on it.  Turn the dosa and press it slightly till the every ingredient sticks on it and gets boiled evenly.  Serve the healthy green dosa with curd as a best side dish.

TROPICAL AMARANTH GRAVY

INGREDIENTS

Siru keerai.                      2 bunch
Coconut milk.                   200 ml
Salt.                                Required quantity
Red Chilli                         6
Garlic.                             15
Channa dhal.                   100 g

PREPARATION

Clean and wash the spinach and chop it.  Boil both the garlic and spinach on a cooker. After the spinach gets boiled, in a pan pour oil and put dry chilli and channa dhal.

Pour coconut milk in the mixture and add the boiled spinach in it.  This gravy will be creamy thick one that gives delicious taste when it is tasted with dosa or Idli or Chappathi.
